Knowing how to cook a great omelet at home is a useful cooking skill for singles as well as for those who cook for large families. Omelets are versatile meals and can be served alone or with any number of side dishes. This tasty food can also be served anytime of the day or night since tradition has broadened beyond simply a breakfast dish. Many restaurants offer this dish throughout the day and produce various renditions that please just about any food preference. 1. Choose good eggs. If have access to fresh, brown eggs, by all means select several medium to large eggs. You can either purchase these from a health food store or grocery store. Organic is best.
2. Gather ingredients. For one basic omelet you will need:

medium size, shallow skillet or griddle and spatula (Remember, if you use teflon coated
cookware, you will need to use a plastic spatula. Of course, teflon coated cookware emits small amounts of formaldehyde, so if you want to use healthier cookware, use stainless steel or cast iron for cooking. Your spatula can then be stainless steel.)
extra light olive oil or spray oil for lubricating the pan or griddle before cooking
seasonings such as salt and pepper
cheese
other ingredients such as peppers, onions, bacon bits, chopped ham, tomatoes, and any number of other tasteful choices that will make your omelet come alive with the flavors you enjoy
3. How to Cook. Let's put it all together.
Take two eggs per omelet and beat well in small bowl. Add 1 tablespoon milk or cream to mixture as well as salt and pepper lightly. Stir.
Slice thinly or grate your preferred cheese and chop preferred vegetables and meat.
Preheat pan or griddle with low temperature.
Drizzle oil or spray oil into pan or on griddle. Make sure sides of shallow pan are also covered with oil. Be careful not to scorch or burn the oil. A low temperature is best for cooking omelets.
Test temperature by dropping a couple of drops of omelet mixture into pan. If it turns to solid without sizzling, then it's ready. If you find your test drop sizzles, then you need to turn the temp down until you have a slow cook temp ready.
Gently pour omelet liquid into pan or on griddle. Let sit for approximately 30 seconds then add a line of filling down the middle. Add cheese first, then meat, then preferred vegetables. When egg moisture has turned to almost a thin, solid texture, take spatula and gently fold right side over the middle of the filling. Then fold left side over the middle. Let sit for about 30 seconds. Carefully turn omelet over for additional cooking of top, if preferred.
After cooking to preferred doneness, carefully slide spatula underneath omelet and lift onto plate or serving tray. If you are making more than one, keep omelets on a warming tray, being careful not to cook any further since they can become hard and spongy.
